Italian Sausage

Ingredients

  • Servings: 2
  • 1 lb ground lamb
  • 1/4 cup water
  • 2 teaspoons fennel seeds
  • 1/8 teaspoon caraway seed
  • 2 teaspoons kosher salt
  • 1 teaspoon ground pepper
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon dry crushed red pepper
  • 1/8 teaspoon oregano
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon sugar

Recipe

  • 1 mix all dry ingredients together.
  • 2 spread ground lamb out in a shallow pan. sprinkle with the spice mixture. drizzle with water.
  • 3 mix as thoroughly as possible (most important step).
  • 4 cover and refrigerate 24 hours. mix again.
  • 5 stuff into casings, make into patties, cook or freeze. i like to just fry it up and use it for a topping on pizza. use your imagination - it tastes great in lots of dishes. cooking time is refrigeration time.
