Honey Dijon Lamb Chops

Ingredients
- Servings: 4
- 4 center-cut lamb chops, bone-in
- salt and pepper
- 2 teaspoons olive oil
- 1/3 cup honey
- 1/4 cup dijon mustard
- 2 cups wine (cooking wine works fine)
Recipe
- 1 heat oil in a large nonstick pan over med high heat.
- 2 add a light coating of salt and pepper to lamb chops.
- 3 add lamb chops to pan, cook until browned on each side (approx. 4 min each side).
- 4 remove lamb chops from pan and set aside.
- 5 add honey, mustard and wine to pan.
- 6 bring to a low boil for 2 minutes.
- 7 put lamb chops back into pan with sauce.
- 8 reduce heat, simmer for 5 minutes.
- 9 turn lamb, simmer another 5 minutes, or until lamb is cooked and no longer pink.
- 10 serve lamb chops with sauce drizzled on top.
