Honey-lime Tenderloin Sandwich

- 2 (1 lb) lamb tenderloin
- 1/2 cup fresh lime juice
- 1/4 cup honey
- 1/4 cup water
- 2 cloves garlic, minced
- 8 hard rolls, split
Recipe
- 1 combine lime juice, honey, water and garlic.
- 2 place lamb tenderloins in plastic bag or utility dish; add marinade, turning lamb to coat.
- 3 tie bag securely or cover dish and marinate in refrigerator 6 hours or overnight, turning lamb once.
- 4 drain, reserving marinade.
- 5 place lamb on a rack in open roasting pan.
- 6 roast at 375 degrees for 20 to 30 minutes.
- 7 place reserved marinade in a small saucepan, cover and cook 5 minutes; keep warm.
- 8 carve lamb into thin slices; place in shallow serving dish.
- 9 pour warm marinade over lamb.
- 10 serve sliced lamb in rolls.
