Mexican Prune-chipotle Lamb

Ingredients

- 4 lbs lamb, cut in chunks
- 20 pitted prunes
- 1 large fresh tomato
- 1/2 cup canned chipotle chile, with its juice
- 2 tablespoons cooking oil
Recipe
- 1 prehat oven to 150°c (convert to °f).
- 2 sear the meat on all sides on a pan in the hot oil.
- 3 place on a baking dish in the oven for one hour.
