Mexican Prune-chipotle Lamb

Total Time: 1 hr 45 mins Preparation Time: 15 mins Cook Time: 1 hr 30 mins

Ingredients

  • Servings: 6
  • 4 lbs lamb, cut in chunks
  • 20 pitted prunes
  • 1 large fresh tomato
  • 1/2 cup canned chipotle chile, with its juice
  • 2 tablespoons cooking oil

Recipe

  • 1 prehat oven to 150°c (convert to °f).
  • 2 sear the meat on all sides on a pan in the hot oil.
  • 3 place on a baking dish in the oven for one hour.
