Grilled Lamb Chops In Pomegranate Marinated

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 2 small racks of lamb
  • salt & freshly ground black pepper, to taste
  • 1 sprig fresh rosemary leaf
  • 1/4 cup pomegranate juice
  • 5 cloves garlic, crushed
  • 1 shallot, finely diced
  • 1/3 cup virgin olive oil

Recipe

  • 1 rub the rack of lamb with the salt, pepper, and rosemary leaves.
  • 2 combine the molasses, garlic, shallot and oil in a zip lock storage bag add the lamb chops, turning over a few times to coat thoroughly.
  • 3 cover and refrigerate 4 hours.
  • 4 preheat the grill.
  • 5 remove the lamb chops from the marinade.
  • 6 grill for 4 minutes per side for rare, or 5 to 6 minutes for medium-rare.
