Herbed Leg Of Lamb

Total Time: 3 hrs 30 mins Preparation Time: 30 mins Cook Time: 3 hrs

Ingredients

  • Servings: 10
  • 5 lbs boneless leg of lamb, netted
  • 3/4 cup dijon mustard
  • 1/2 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 6 cloves garlic, peeled
  • salt and pepper, to taste
  • 1 (14 ounce) can beef broth
  • 3/4 cup red wine

Recipe

  • 1 season lamb with salt and pepper.
  • 2 sliver two cloves of the garlic.
  • 3 with a sharp knife, cut slits into the lamb and insert the slivers of garlic.
  • 4 rub meat generously all over with the dijon mustard.

  • 11 pour the 2 cups liquid over the lamb, cover and roast for one hour.

  • 14 serve with au jus and chutney or mint sauce, if desired.
