Creole Chops

Ingredients

- 1/4 cup flour
- 4 boneless lamb loin chops
- 4 tablespoons oil
- 1 large onion, thinly sliced
- 1/2 cup chopped green pepper
- 1 cup sliced celery
- 2 cloves garlic, minced
- 2 cups stewed tomatoes
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 1/2 teaspoons thyme
- 1/2 teaspoon pepper
- 1/4 teaspoon hot sauce
Recipe
- 1 coat chops with flour; brown in oil.
- 2 remove and keep warm.
- 3 in drippings, saute onion, green pepper, celery, and garlic.
- 4 stir in tomatoes, and spices.
- 5 return chops to pan.
- 6 bring to a boil.
- 7 reduce heat and simmer for 15 minutes.
