Creole Chops

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/4 cup flour
  • 4 boneless lamb loin chops
  • 4 tablespoons oil
  • 1 large onion, thinly sliced
  • 1/2 cup chopped green pepper
  • 1 cup sliced celery
  • 2 cloves garlic, minced
  • 2 cups stewed tomatoes
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 1/2 teaspoons thyme
  • 1/2 teaspoon pepper
  • 1/4 teaspoon hot sauce

Recipe

  • 1 coat chops with flour; brown in oil.
  • 2 remove and keep warm.
  • 3 in drippings, saute onion, green pepper, celery, and garlic.
  • 4 stir in tomatoes, and spices.
  • 5 return chops to pan.
  • 6 bring to a boil.
  • 7 reduce heat and simmer for 15 minutes.
