Hot German Potato Salad For 2

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 2
  • 2 medium potatoes, pared and halved
  • 3 slices bacon
  • 1/3 cup chopped onion
  • 1 tablespoon flour
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon celery seed
  • 1 dash pepper
  • 1/3 cup water
  • 3 tablespoons vinegar

Recipe

  • 1 heat 1 inch of salted water (1/2 teaspoon salt to 1 cup water) to boiling.
  • 2 add potatoes.
  • 3 cover and heat to boiling; cook until tender, 20 to 25 minutes.
  • 4 drain and set aside.
  • 5 in 8-inch skillet, fry bacon until crisp, remove and drain.
  • 6 in same skillet, cook and stir onion in bacon fat until tender.
  • 7 stir in flour, sugar, salt, celery seed and pepper.
  • 8 cook over low heat, stirring until mixture is bubbly.
  • 9 remove from heat.
  • 10 stir in water and vinegar.
  • 11 heat to boiling, stirring constantly.
  • 12 boil and stir 1 minute.
  • 13 remove from heat.
  • 14 crumble bacon into hot mixture, then slice warm potatoes into hot mixture.
  • 15 cook until hot and bubbly, stirring lightly to coat potato slices.
