Hot German Potato Salad For 2

Ingredients

- 2 medium potatoes, pared and halved
- 3 slices bacon
- 1/3 cup chopped onion
- 1 tablespoon flour
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon celery seed
- 1 dash pepper
- 1/3 cup water
- 3 tablespoons vinegar
Recipe
- 1 heat 1 inch of salted water (1/2 teaspoon salt to 1 cup water) to boiling.
- 2 add potatoes.
- 3 cover and heat to boiling; cook until tender, 20 to 25 minutes.
- 4 drain and set aside.
- 5 in 8-inch skillet, fry bacon until crisp, remove and drain.
- 6 in same skillet, cook and stir onion in bacon fat until tender.
- 7 stir in flour, sugar, salt, celery seed and pepper.
- 8 cook over low heat, stirring until mixture is bubbly.
- 9 remove from heat.
- 10 stir in water and vinegar.
- 11 heat to boiling, stirring constantly.
- 12 boil and stir 1 minute.
- 13 remove from heat.
- 14 crumble bacon into hot mixture, then slice warm potatoes into hot mixture.
- 15 cook until hot and bubbly, stirring lightly to coat potato slices.
