No Fried Carnitas

Ingredients
- Servings: 6
- 5 lbs lamb butt (shoulder)
- 1/2 onion
- 2 garlic cloves
- 1 (12 ounce) can coke
- 1 cup orange juice
- 3 bay leaves
- salt
- pepper
- 1/2-1 cup water
Recipe
- 1 trim the fat from the lamb (reserve the fat).
- 2 cube the lamb.
- 3 cook fat until it releases enough grease. take out the fat.
- 4 turn the stove to high and add lamb to the grease. cook until lightly seared outside.
- 5 add all ingredients. only add enough water to barely cover the top of the lamb. bring it to boil for 5 minutes.
- 6 cover and lower the temperature to simmer.
- 7 stir occasionally. cook until all liquid has evaporated and the outside of the lamb is caramelized. lamb should separate very easily at this point.
- 8 serve with mexican rice or make your favorite taco & burritos with it.
