Grilled Apricot Lamb Skewers

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb lamb loin, cut into 2 inch cubes
  • 1/4 cup apricot preserves
  • 1 tablespoon honey
  • 1 teaspoon olive oil
  • 2 tablespoons chopped fresh rosemary
  • 1/4 teaspoon crushed red pepper flakes
  • 4 fresh apricots, pitted, cut into wedges
  • 2 cups fresh watercress (optional) or 2 cups mixed greens (optional)

Recipe

  • 1 in a large resealable bag combine lamb, apricot preserves, honey, oil, rosemary and red pepper flakes. seal the bag and turn to coat all the ingredients. refrigerate for 1-8 hours. if using wooden skewers soak them in water for 1/2 hour before using.
  • 2 preheat grill to medium high (350 to 400). remove lamb and reserve marinade. alternately thread lamb and apricots onto skewers. brush with reserved marinade and discard marinade.
  • 3 place skewers on grill. grill covered for 6-8 minutes or until lamb registers 160 degrees. turn occasioanlly. if desired serve on a bed of watercress or mixed greens and sprinkle with additional rosemary.
