Irish Potato & Bacon Cakes

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 slices bacon, chopped and crisp fried
  • 1 lb mashed potatoes, boiled & mashed
  • 2 tablespoons flour
  • salt & pepper
  • butter or dripping (for frying, i use lite olive oil though not traditional)

Recipe

  • 1 drain your bacon on paper towels.
  • 2 mix the bacon with the mashed potatoes, flour, salt& pepper.
  • 3 form into 4 patties.
  • 4 heat the dripping (butter) (or oil) in a skillet and over medium heat fry the cakes about 5 minutes on each side or until golden, serve.
