Ingredients

- 3 -4 lbs lamb tenderloin, 3-4, cut into 1-inch slices
- 1 cup flour
- 1/4 cup butter
- 1/4 cup vegetable oil
- 1 cup wine or 1 cup chicken broth
- 1/2 cup water
- 1 large onion, chopped
- 1 -2 garlic clove, minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1 lb fresh mushrooms, sliced
Recipe
- 1 dredge lamb slices in flour.
- 2 heat butter and oil in a large skillet.
- 3 brown lamb in batches on both sides; remove and keep each batch warm in oven.
- 4 stir in wine or broth, water, onions, garlic and seasonings into drippings in pan.
- 5 return lamb to skillet, layering if necessary.
- 6 top with mushrooms.
- 7 cover and cook on low heat for 15 to 20 minutes or until meat juices run clear.
