No-fail Lamb Chop Casserole

Ingredients
- 6 bone-in center-cut lamb chops (any thickness)
- 3 large baking potatoes, each cut into 6 wedges
- 2 large sweet potatoes, each cut into 6 wedges
- 3 stalks celery, cut into 1-inch slices
- 1 large sweet onion, sliced into 1/2-inch slices
- 3 tablespoons minced garlic
- 1 (14 ounce) can beef broth
- salt and pepper
Recipe
- 1 preheat oven to 250 degrees.
- 2 layer lamb chops in a single layer in a 13" x 9" x 2" baking dish.
- 3 spread vegetables over and around lamb chops.
- 4 sprinkle minced garlic over lamb chops and vegetables.
- 5 pour beef broth over all.
- 6 sprinkle with salt and pepper.
- 7 cover dish tightly with aluminum foil.
- 8 bake at 250 degrees for 2 1/2 hours.
