No-fail Lamb Chop Casserole

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • 6 bone-in center-cut lamb chops (any thickness)
  • 3 large baking potatoes, each cut into 6 wedges
  • 2 large sweet potatoes, each cut into 6 wedges
  • 3 stalks celery, cut into 1-inch slices
  • 1 large sweet onion, sliced into 1/2-inch slices
  • 3 tablespoons minced garlic
  • 1 (14 ounce) can beef broth
  • salt and pepper

Recipe

  • 1 preheat oven to 250 degrees.
  • 2 layer lamb chops in a single layer in a 13" x 9" x 2" baking dish.
  • 3 spread vegetables over and around lamb chops.
  • 4 sprinkle minced garlic over lamb chops and vegetables.
  • 5 pour beef broth over all.
  • 6 sprinkle with salt and pepper.
  • 7 cover dish tightly with aluminum foil.
  • 8 bake at 250 degrees for 2 1/2 hours.
