Grilled Honey-orange Lamb Tenderloin

Ingredients

- 1 1/2 lbs lamb tenderloin
- 2 cups honey
- 1/4 cup fresh rosemary, chopped
- 1/4 cup fresh thyme, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons light brown sugar
- 2 tablespoons minced garlic
- 1 tablespoon dijon mustard
- 1 cup fresh orange juice
- 1 cup apple juice
- 1/4 cup olive oil
- 2 tablespoons soy sauce
Recipe
- 1 trim any excess fat from the lamb loins. combine all of the ingredients in a large bowl and mix well. place lamb in a resealable bag and pour marinade over lamb. marinate in the refrigerator for 2 hours, turning occasionally.
- 2 drain lamb and discard marinade. preheat grill to medium heat. place lamb on rack and cover and grill until done to preference. let stand 10 minutes before slicing.
