Grilled Lamb Kabobs

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups pineapple juice
  • 3 limes, juice of
  • 3 tablespoons olive oil
  • 1/2 cup soy sauce
  • 1 1/2 lbs lamb tenderloin, cut in 1 . 5-inch cubes
  • 2 tablespoons garlic salt
  • 1 teaspoon crushed rosemary
  • 1 fresh pineapple, cut in 2-inch cubes

Recipe

  • 1 mix pineapple juice, lime juice, olive oil, soy sauce.
  • 2 add marinade to lamb and marinate at least 4 hours.
  • 3 soak wooden skewers in water for at least 30 minutes prevent burning.
  • 4 thread lamb and pineapple chunks on skewers, beginning and ending with lamb.
  • 5 sprinkle with garlic salt and rosemary.
  • 6 grill 10-12 minutes, brushing with marinade and turning until lamb reaches 145 degrees.
  • 7 enjoy with a light salad and simple glass of wine.
  • 8 preparation time does not include marinade time.
