Lamb Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 3 tablespoons lemon juice
  • 1 lemon zest
  • 1/4 cup mint, shredded
  • 2 tablespoons olive oil
  • 400 g lamb backstraps
  • 1/4 cup pine nuts
  • 2 garlic cloves, minced
  • 400 g spinach, chopped
  • 1/2 red onion, finely sliced
  • 3/4 cup kalamata olive
  • 4 tablespoons olive oil
  • 120 g feta cheese

Recipe

  • 1 combine lemon juice, zest, and mint in small bowl.
  • 2 heat 2 tablespoon olive oil over medium heat. warm lamb, roughly 1 minute each side. remove from heat.
  • 3 saute garlic and pine nuts, roughly 2 minutes.
  • 4 combine lamb, pine nuts & garlic, spinach, onion, and olives.
  • 5 whisk 4 tbsp olive oil into dressing mixture, toss with salad.
