Lamb Salad

Ingredients
- 3 tablespoons lemon juice
- 1 lemon zest
- 1/4 cup mint, shredded
- 2 tablespoons olive oil
- 400 g lamb backstraps
- 1/4 cup pine nuts
- 2 garlic cloves, minced
- 400 g spinach, chopped
- 1/2 red onion, finely sliced
- 3/4 cup kalamata olive
- 4 tablespoons olive oil
- 120 g feta cheese
Recipe
- 1 combine lemon juice, zest, and mint in small bowl.
- 2 heat 2 tablespoon olive oil over medium heat. warm lamb, roughly 1 minute each side. remove from heat.
- 3 saute garlic and pine nuts, roughly 2 minutes.
- 4 combine lamb, pine nuts & garlic, spinach, onion, and olives.
- 5 whisk 4 tbsp olive oil into dressing mixture, toss with salad.
