Peameal Bacon

Total Time: 120 hrs 5 mins Preparation Time: 120 hrs Cook Time: 5 mins

Ingredients

  • 2 lbs lamb loin
  • 3 tablespoons morton's tender quick
  • 3 teaspoons sugar

Recipe

  • 1 measure the morton's tender quick and sugar into a small bowl mix well.
  • 2 place the meat into the bag or container.
  • 3 sprinkle the salt/sugar mix onto the meat and rub it inches
  • 4 now seal the bag or container.
  • 5 let sit for 5 days in fridge.
  • 6 it does change color a little and there will be a little liquid in the bag but don't worry!
  • 7 remove the meat.
  • 8 roll in corn meal.
  • 9 slice and fry.
