Pulled Lamb Hash

Ingredients

  • Servings: 3
  • 1 tablespoon butter
  • 1/2 cup chopped red onion
  • 8 ounces cooked pulled lamb without sauce, chopped
  • 2 leftover baked potatoes, diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper (optional)

    Preparation Time: 10 mins Cook Time: 10 mins Ready Time: 20 mins

  • melt butter in a skillet over medium heat; cook and stir onion in melted butter until slightly softened, about 2 minutes. add lamb and continue to cook for 2 minutes more.
  • stir potatoes into lamb mixture and toss. cook until potatoes are browned, stirring occasionally, about 5 minutes. season with salt, black pepper, and cayenne pepper.
