Pulled Lamb Hash
Ingredients

- 1 tablespoon butter
- 1/2 cup chopped red onion
- 8 ounces cooked pulled lamb without sauce, chopped
- 2 leftover baked potatoes, diced
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon cayenne pepper (optional)

- melt butter in a skillet over medium heat; cook and stir onion in melted butter until slightly softened, about 2 minutes. add lamb and continue to cook for 2 minutes more.
- stir potatoes into lamb mixture and toss. cook until potatoes are browned, stirring occasionally, about 5 minutes. season with salt, black pepper, and cayenne pepper.
