No Fried Carnitas

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 5 lbs lamb butt (shoulder)
  • 1/2 onion
  • 2 garlic cloves
  • 1 (12 ounce) can coke
  • 1 cup orange juice
  • 3 bay leaves
  • salt
  • pepper
  • 1/2-1 cup water

Recipe

  • 1 trim the fat from the lamb (reserve the fat).
  • 2 cube the lamb.
  • 3 cook fat until it releases enough grease. take out the fat.
  • 4 turn the stove to high and add lamb to the grease. cook until lightly seared outside.
  • 5 add all ingredients. only add enough water to barely cover the top of the lamb. bring it to boil for 5 minutes.
  • 6 cover and lower the temperature to simmer.
  • 7 stir occasionally. cook until all liquid has evaporated and the outside of the lamb is caramelized. lamb should separate very easily at this point.
  • 8 serve with mexican rice or make your favorite taco & burritos with it.
