Plum Good Lamb Chops

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 3 tablespoons plum preserves
  • 1 green onion, thinly sliced
  • 1 tablespoon soy sauce
  • 2 teaspoons lemon juice
  • 1/8 teaspoon curry powder
  • 1 dash cinnamon
  • 1 dash red pepper
  • 4 center-cut lamb chops (3/4 inch thick)
  • 1 garlic clove, split

Recipe

  • 1 preheat oven to 350*.
  • 2 in small saucepan, heat and stir plum preserves, green onion, soy sauce, lemon juice, curry powder, cinnamon and red pepper over medium heat until bubbly; set aside.
  • 3 trim fat from lamb chops.
  • 4 rub both sides of chops with garlic.
  • 5 place chops in baking dish.
  • 6 baste with sauce.
  • 7 bake 20 to 25 minutes or until juices run clear, basting often.
