Plum Good Lamb Chops

Ingredients
- Servings: 4
- 3 tablespoons plum preserves
- 1 green onion, thinly sliced
- 1 tablespoon soy sauce
- 2 teaspoons lemon juice
- 1/8 teaspoon curry powder
- 1 dash cinnamon
- 1 dash red pepper
- 4 center-cut lamb chops (3/4 inch thick)
- 1 garlic clove, split
Recipe
- 1 preheat oven to 350*.
- 2 in small saucepan, heat and stir plum preserves, green onion, soy sauce, lemon juice, curry powder, cinnamon and red pepper over medium heat until bubbly; set aside.
- 3 trim fat from lamb chops.
- 4 rub both sides of chops with garlic.
- 5 place chops in baking dish.
- 6 baste with sauce.
- 7 bake 20 to 25 minutes or until juices run clear, basting often.
