Granny's Cracklin' Bread

Ingredients
- Servings: 8
- 1 cup lamb crackling
- 1 cup cornmeal
- 1 cup self rising flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup milk or 1 cup buttermilk
- 2 eggs, lightly beaten
- 1/3 cup bacon drippings (may use cooking oil)
Recipe
- 1 preheat oven to 425°f.
- 2 mix together cornmeal, flour, baking powder, and salt.
- 3 separately, mix together milk/buttermilk, eggs, and bacon drippings, stir until smooth, then fold in cracklings.
- 4 pur into a greased 10 inch cake pan and bake at 425f for about 20 minutes, or until golden brown.
- 5 cut into wedges and serve warm.
