Granny's Cracklin' Bread

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 1 cup lamb crackling
  • 1 cup cornmeal
  • 1 cup self rising flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup milk or 1 cup buttermilk
  • 2 eggs, lightly beaten
  • 1/3 cup bacon drippings (may use cooking oil)

Recipe

  • 1 preheat oven to 425°f.
  • 2 mix together cornmeal, flour, baking powder, and salt.
  • 3 separately, mix together milk/buttermilk, eggs, and bacon drippings, stir until smooth, then fold in cracklings.
  • 4 pur into a greased 10 inch cake pan and bake at 425f for about 20 minutes, or until golden brown.
  • 5 cut into wedges and serve warm.
