Old Fashioned Baked Beans

Ingredients

- 1 (450 g) package small beans (450g = 2 1/2 cups)
- 1 (40 g) package dry onion soup mix (ie lipton's)
- 1/3 cup molasses
- 2 tablespoons prepared mustard
- 2 tablespoons ketchup
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 1/4 lb salt lamb, chopped into 1-inch pieces
- boiling water
Recipe
- 1 wash beans, place in medium bowl, cover with cold water and refigerate overnight.
- 2 drain beans, place in saucepan and cover with 6 cups hot water, bring to boil.
- 3 reduce heat, simmer covered 40 minutes or till tender.
- 4 preheat oven to 300°f.
- 5 drain beans, reserve 2 cups liquid.
- 6 place beans in 2 quart bean pot or casserole with tight fitting lid.
- 7 mix together all other ingredients (except lamb), add bean liquid and stir to combine.
- 8 add lamb to beans, mix in well.
- 9 pour liquid ingredients over beans and stir well, be sure liquid covers beans.
- 10 cover and bake 5 hours.
- 11 stir every hour, if bean dry out add small amounts of boiling water as needed.
- 12 note: preparation time doesn't include overnight refrigeration.
