Old Fashioned Bean Soup

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • 2 cups small navy beans
  • 5 cups water
  • 1/4 lb cubed salt lamb
  • 1 large onion, diced
  • 1 bay leaf
  • 1/4 cup cider vinegar
  • 2 beef bouillon cubes

Recipe

  • 1 wash, sort and soak beans in water to cover overnight.
  • 2 drain water and cover with 5 cups cold water.
  • 3 cook in covered pot over low flame.
  • 4 meantime fry salt lamb until crisp, saute onions in lamb fat until transparent.
  • 5 drain and hold.
  • 6 when beans are nearly done, add lamb, onions, bouillon, bay leaf, vinegar and salt and pepper to taste.
  • 7 simmer very slowly until beans can be crushed easily between fingers.
