Old Fashioned Bean Soup

Ingredients
- 2 cups small navy beans
- 5 cups water
- 1/4 lb cubed salt lamb
- 1 large onion, diced
- 1 bay leaf
- 1/4 cup cider vinegar
- 2 beef bouillon cubes
Recipe
- 1 wash, sort and soak beans in water to cover overnight.
- 2 drain water and cover with 5 cups cold water.
- 3 cook in covered pot over low flame.
- 4 meantime fry salt lamb until crisp, saute onions in lamb fat until transparent.
- 5 drain and hold.
- 6 when beans are nearly done, add lamb, onions, bouillon, bay leaf, vinegar and salt and pepper to taste.
- 7 simmer very slowly until beans can be crushed easily between fingers.
