Ingredients

- 1 lb boneless lamb, cut into 3/4 inch cubes
- 1 tablespoon taco seasoning
- 1 teaspoon vegetable oil
- 1 cup chunky salsa
- 1/2 cup peach preserves
Recipe
- 1 coat lamb cubes with taco seasoning.
- 2 heat oil in a heavy nonstick skillet over medium high heat. saute lamb 2-3 minutes, stirring occasionally until browned on all sides.
- 3 add salsa and preserves.
- 4 reduce heat to low, cover and simmer 15-20 minutes.
