Peachy Lamb Picante

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb boneless lamb, cut into 3/4 inch cubes
  • 1 tablespoon taco seasoning
  • 1 teaspoon vegetable oil
  • 1 cup chunky salsa
  • 1/2 cup peach preserves

Recipe

  • 1 coat lamb cubes with taco seasoning.
  • 2 heat oil in a heavy nonstick skillet over medium high heat. saute lamb 2-3 minutes, stirring occasionally until browned on all sides.
  • 3 add salsa and preserves.
  • 4 reduce heat to low, cover and simmer 15-20 minutes.
