Jamaican Lamb Chops

Ingredients

- 2 teaspoons paprika
- 1 teaspoon thyme, chopped
- 1/4 teaspoon cumin, ground
- 1/4 teaspoon allspice
- 2 tablespoons olive oil
- 4 (250 g) lamb chops
- 1 papaya, red peeled and diced
- 1 red chili, seeded and finely chopped
- 1 lime, peeled, finely copped
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon sesame oil
- 1 teaspoon brown sugar
- 1/4 cup coriander leaves
Recipe
- 1 combine the paprika, thyme, cumin, allspice and half of oil in a small bowl. rub spice mixture over lamb chops. cover and stand for 30 mins to marinate.
- 2 place the papaya , chilli lime flesh and juice, extra oil sesame oil and sugar in a bowl and stir until sugr dissolves. stir through coriander leaves and sent aside.
- 3 heat a chargrill on high heat. brush with remaining oil. cook lamb to your liking. rest for 5 minutes.
- 4 serve with papaya salsa.
