Just Great Meatloaf

Total Time: 1 hr 35 mins Preparation Time: 15 mins Cook Time: 1 hr 20 mins

Ingredients

  • 2 lbs ground beef (top round or sirloin)
  • 1 lb ground veal
  • 1 lb ground lamb
  • 1 cup cottage cheese
  • 1 cup fresh breadcrumb
  • 1 1/2 cups finely chopped onions
  • 3 eggs, beaten
  • 1 cup finely chopped green pepper
  • 1/2 cup chili sauce
  • salt, pepper to taste
  • 1/2 cup red wine
  • 1/2 cup tomato sauce
  • 1/2 cup chili sauce

Recipe

  • 1 heat oven to 400 degrees.
  • 2 combine beef, veal and lamb in large bowl; mix thoroughly.
  • 3 add the cottage cheese, bread crumbs, onion, eggs, green pepper and 1/2 cup chili sauce.
  • 4 season with salt and pepper to taste.
  • 5 divide mixture in half and place into two 9-by-5-inch loaf pans.
  • 6 pour 1/4 cup of the wine over each meatloaf.
  • 7 mix the tomato sauce and 1/2 cup chili sauce in small bowl.
  • 8 spread half of the mixture over each meatloaf.
  • 9 bake at 400 degrees for 30 minutes, basting frequently with pan juices.
  • 10 reduce oven temperature to 350 degrees and bake another 50 to 60 minutes, until juices run clear.
