Mushroom Lamb Scallopinni

Ingredients

  • Servings: 8
  • 3 -4 lbs lamb tenderloin, 3-4, cut into 1-inch slices
  • 1 cup flour
  • 1/4 cup butter
  • 1/4 cup vegetable oil
  • 1 cup wine or 1 cup chicken broth
  • 1/2 cup water
  • 1 large onion, chopped
  • 1 -2 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 lb fresh mushrooms, sliced

Recipe

  • 1 dredge lamb slices in flour.
  • 2 heat butter and oil in a large skillet.
  • 3 brown lamb in batches on both sides; remove and keep each batch warm in oven.
  • 4 stir in wine or broth, water, onions, garlic and seasonings into drippings in pan.
  • 5 return lamb to skillet, layering if necessary.
  • 6 top with mushrooms.
  • 7 cover and cook on low heat for 15 to 20 minutes or until meat juices run clear.
