Mustard Lamb And Mushroom One Pot

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 8 boneless lamb chops
  • 3 tablespoons dijon mustard
  • 9 ounces button mushrooms, halved
  • 1 1/4 cups vegetable stock
  • 7 ounces spinach, chopped

Recipe

  • 1 heat the oil in a large pan over a medium heat.
  • 2 add the onions to the pan and fry for 8-10min until they turn soft and golden.
  • 3 smear the lamb with the mustard. push the onions to one side of the pan and add the lamb.
  • 4 fry for 10-15min until the meat is browned all over.
  • 5 add the mushrooms and stock, season with salt and pepper then cover and cook for 30min.
  • 6 add the spinach and simmer for 5min. serve with mashed potato.
