Mustard Lamb And Mushroom One Pot

Ingredients

- 1 tablespoon olive oil
- 2 onions, chopped
- 8 boneless lamb chops
- 3 tablespoons dijon mustard
- 9 ounces button mushrooms, halved
- 1 1/4 cups vegetable stock
- 7 ounces spinach, chopped
Recipe
- 1 heat the oil in a large pan over a medium heat.
- 2 add the onions to the pan and fry for 8-10min until they turn soft and golden.
- 3 smear the lamb with the mustard. push the onions to one side of the pan and add the lamb.
- 4 fry for 10-15min until the meat is browned all over.
- 5 add the mushrooms and stock, season with salt and pepper then cover and cook for 30min.
- 6 add the spinach and simmer for 5min. serve with mashed potato.
