Cumin-dusted Lamb Cutlets With Citrus Pan Sauce

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 4 tablespoons all-purpose flour
  • 4 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 8 lamb cutlets (about 24 ounces total)
  • 6 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1/2 cup fresh orange juice
  • 3 tablespoons fresh lemon juice
  • orange wedge

Recipe

  • 1 mix first 4 ingredients on a plate.
  • 2 coat lamb in seasoned flour, shaking off extra.
  • 3 heat 2 tablespoons of olive oil in a large skillet over medium high heat.
  • 4 add lamb and sauté until cooked about 3 minutes per side.
  • 5 transfer to plates.
  • 6 add 4 tablespoons olive oil to skillet.
  • 7 add garlic and sauté until golden brown for about 10 minutes.
  • 8 add orange juice and lemon juice.
  • 9 broil until slightly thickened, whisking occasionally for about 30 seconds.
  • 10 season with salt and pepper.
  • 11 pour sauce over lamb.
  • 12 garnish with orange wedges and serve.
