Honey Mustard Lamb Tenderloin

Ingredients

- 1 (3/4 lb) lamb tenderloin
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- 2 teaspoons olive oil
- 1 teaspoon garlic, finely minced
- 1/2 teaspoon dried oregano leaves
Recipe
- 1 heat oven to 425.
- 2 line baking sheet with foil; place lamb in pan.
- 3 in small bowl, mix remaining ingredients; brush over lamb tenderloin.
- 4 bake 25 to 30 minutes or until lamb has slight blush of pink in center and meat thermometer inserted reads 160.
- 5 let stand 5 minutes.
- 6 cut diagonally into slices.
