Mussels With Prosciutto Ham

Ingredients

- 2 lbs mussels
- 1/2 cup wine
- 1 large shallot, chopped
- 4 ounces prosciutto, diced
- 2 ounces butter
- 1 tablespoon parsley, chopped
- salt and pepper
Recipe
- 1 clean the mussels under running water and keep cool.
- 2 saute the chopped shallots in the butter for 2 minutes over medium heat.
- 3 add the diced prosciutto and cook for 2 more minutes.
- 4 add the wine and bring to a boil.
- 5 add the mussels and cover.
- 6 cook until all mussels are opened.
- 7 add parsley and serve.
- 8 yum!
