North African Lamb Kaftas

Ingredients
- Servings: 4
- 1 lb ground lamb
- 1/4 cup onion (minced)
- 2 tablespoons poppy seeds
- 1 teaspoon cumin (ground)
- 1 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne (ground)
- 1 egg (beaten)
- 3 tablespoons olive oil (divided)
- 12 wooden skewers (6-inch)
Recipe
- 1 mix lamb, onion, poppy seeds, cumin, salt, cinnamon and cayenne in large bowl.
- 2 add egg and mix well.
- 3 form lamb mixture into a 3 x 1/2 inch long rolls.
- 4 repeat with remaining lamb mixture to make about 12 kaftas.
- 5 heat 2 tablespoons of the oil in large skillet on medium heat and add 1/2 of the kaftas.
- 6 cook kaftas for 7 minutes or until cooked through and browned on all sides.
- 7 drain on paper towels.
- 8 repeat with remaining kaftas, adding remaining 1 tablespoon oil as needed.
- 9 to serve kaftas, carefully slide a wooden skewer lengthwise through center of each kafta.
- 10 serve with dipping sauce.
