Pecan Crusted Lamb Noisettes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1/3 cup panko breadcrumbs
  • 1/3 cup coursely ground pecans
  • 1/3 cup all-purpose flour
  • 1 tablespoon water
  • 1 large egg
  • 1 (1 lb) lamb tenderloin, trimmed crosswise into 8 slices
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 teaspoons butter

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine pecans and panko, and spread on a jelly roll pan.
  • 3 bake at 350 degrees for 10 minutes, then place in a shallow dish.
  • 4 place flour in a seperate shallow dish.
  • 5 combine water and egg in a seperate bowl.
  • 6 slice the lamb crosswise into 8 slices, and place each lamb slice between 2 sheets of heavy-duty plastic wrap.
  • 7 pound to 1/4 inch thickness using a meat mallet.
  • 8 sprinkle lamb with salt and pepper, then dredge in flour, and dip in egg mixture, and dredge in breadcrumb mixture.
  • 9 melt butter in a large skillet, over medium-high heat.
  • 10 add half of lamb to pan, cook 2 minutes on each side.
  • 11 place lamb on a jelly-roll pan.
  • 12 repeat procedure with the remaining lamb and butter.
  • 13 bake at 350 degrees for 5 minutes.
