simple and yummy pulled lamb

Ingredients

  • Servings: 1
  • 1 (7 pound) lamb shoulder roast, trimmed and cut into chunks
  • 3 (12 fluid ounce) cans or bottles root
  • 1 (18 ounce) bottle barbeque sauce

Recipe

    Preparation Time: 10 mins Cook Time: 45 mins Ready Time: 55 mins

  • put lamb in the bottom of a pressure cooker. pour root over the lamb.
  • lock the lid the pressure cooker and place over a burner on high.
  • cook lamb for 45 minutes. release pressure from the pressure cooker according to manufacturer's directions before checking meat for tenderness; it should be tender enough to easily pull apart. if the lamb is not yet done enough, again lock the lid on the cooker and continue cooking over high heat another 30 minutes.
  • release pressure from the cooker; drain liquid and transfer meat to a large bowl. pull lamb into strands using two forks. pour barbeque sauce over the lamb; stir to coat.
