Cornbread Sausage Stuffing

Ingredients

  • 2 (6 ounce) packages cornbread stuffing mix
  • 1 pound ground lamb sausage
  • 1 onion, chopped
  • 4 stalks celery, chopped
  • 2 tablespoons butter, melted
  • 1 teaspoon poultry seasoning
  • 1 (14.5 ounce) can chicken broth

  • prepare cornbread stuffing mix according to package directions. preheat oven to 350 degrees f (175 degrees c).
  • place sausage in a large, deep skillet. cook over medium-high heat until evenly brown; drain.
  • in a large bowl, mix cornbread stuffing, sausage, onion, celery, butter, poultry seasoning and desired amount of chicken broth.

  • 1 lamb tenderloin
  • salt and ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 1 red onion, sliced
  • 2 shallots, sliced
  • 3 fresh thyme sprigs, or more to taste
  • 2 firm plums, pitted and each cut into 4 wedges
  • 1 cup water
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon cold butter

  • preheat oven to 400 degrees f (200 degrees c). generously season lamb tenderloin with salt and black pepper.

sausage cheese grits

  • 1 cup quick-cooking grits
  • 4 ounces shredded gouda cheese
  • 3 tablespoons butter
  • 1/4 teaspoon hot pepper sauce

  • preheat oven to 375 degrees f (190 degrees c).

Lemon Pepper Peas

Ingredients

  • Servings: 8
  • 1 tablespoon vegetable oil, or more as needed
  • 2 duck legs
  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 6 cups chicken broth
  • 1 pound andouille sausage, thickly sliced
  • 1 large onion, chopped
  • 1 cup diced peppers
  • 1 cup chopped celery
  • 4 green onions, chopped
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1 cup diced fresh tomatoes
  • 1 smoked ham hock
  • 2 cups water, or as needed
  • 1 cup pickled okra, rinsed and sliced
  • 1 pound gulf shrimp
  • 1 pound crawfish tail meat
  • 1 tablespoon chopped green onion (optional)

    Ready Time: 6 hrs 25 mins

  • heat vegetable oil in a skillet over medium heat. cook duck legs in the hot oil, skin-side down, until duck legs are browned and skillet contains rendered duck fat, about 10 minutes on the skin side. flip and cook 3 to 4 minutes on the meat side. remove duck legs from skillet, leaving rendered duck fat in the skillet.
  • whisk 1 cup flour into the duck fat, adding enough vegetable oil to make the flour mixture a thick and smooth roux. turn heat to medium-low and cook the roux, stirring constantly, until it turns a rich reddish-brown color, about 40 minutes. whisk 2 more tablespoons flour into roux and cook for 2 minutes.
  • whisk chicken broth into roux, 1 cup at a time, until all broth has been incorporated. remove roux mixture from heat.
  • brown andouille sausage in a large dutch oven over medium heat, about 8 minutes; stir in onion, peppers, celery, and 4 green onions, cooking until onion is translucent, about 10 minutes. stir thyme, bay leaf, black pepper, and cayenne pepper into sausage mixture, followed by diced tomatoes. stir to combine.
  • place smoked ham hock into the center of the sausage and vegetables. pour roux mixture over ham hock along with enough water to cover. place duck legs into mixture. bring to a simmer, turn heat to low, and cover with a lid set at an angle to let steam out. simmer slowly, stirring occasionally until duck and ham hock meat are tender, about 4 hours. skim as much fat as possible off the top as it simmers.
  • remove duck and ham hock to a bowl and let cool. stir pickled okra into gumbo. pick meat from duck legs and lamb hock and return meat to the gumbo. simmer gumbo for 45 more minutes.
  • turn heat to medium-high, bring gumbo to a boil, and stir in shrimp and crawfish tails. cook until shrimp and crawfish tails are bright pink, about 3 minutes. stir in 1 tablespoon green onion, taste and adjust seasoning, and serve.

Italian Sausage Soup

  • 1 pound italian sausage
  • 1 clove garlic, minced
  • 2 (14 ounce) cans beef broth
  • 1 (14.5 ounce) can italian-style stewed tomatoes
  • 1 cup sliced carrots
  • 1 (14.5 ounce) can great northern beans, undrained
  • 2 small zucchini, cubed
  • 2 cups spinach - packed, rinsed and torn
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt

  • in a stockpot or dutch oven, brown sausage with garlic. stir in broth, tomatoes and carrots, and season with salt and pepper. reduce heat, cover, and simmer 15 minutes.

Squash Casserole Ii

Ingredients

  • Servings: 8
  • 1 1/2 pounds yellow crookneck squash - peeled, seeded, and sliced
  • 1 onion, thinly sliced
  • 1 carrot, grated
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (8 ounce) container sour cream
  • 1 cup butter
  • 7 1/2 ounces herbed dry bread stuffing mix

  • preheat oven to 350 degrees f (175 degrees c).
  • cook squash and onions in boiling salted water until tender. drain and mash them with 1/2 cup butter or margarine. stir in sour cream, grated carrot and cream of chicken soup. set aside.

  • 1 lamb tenderloin
  • salt and ground black pepper to taste
  • 1 tablespoon vegetable oil
  • 1 red onion, sliced
  • 2 shallots, sliced
  • 3 fresh thyme sprigs, or more to taste
  • 2 firm plums, pitted and each cut into 4 wedges
  • 1 cup water
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon cold butter

  • preheat oven to 400 degrees f (200 degrees c). generously season lamb tenderloin with salt and black pepper.
  • heat oil in a large, oven-proof skillet over medium-high heat. cook tenderloin until browned on all sides, 2 to 4 minutes per side. transfer tenderloin to a plate.
  • saute onion with a pinch of salt in the same skillet until just softening, 3 to 5 minutes. add shallots, reduce heat to medium, and cook and stir until shallots and onion are golden brown and caramelized, about 10 minutes.
  • stir thyme into onion mixture; place tenderloin over onion mixture, and set plum quarters, skin-side down, around lamb tenderloin.
  • cook until lamb is slightly pink in the center, about 20 minutes. an instant-read thermometer inserted into the center should read at least 145 degrees f (63 degrees c). transfer lamb and plums to a plate.
  • place skillet over medium-high heat and pour water and balsamic vinegar into onion mixture. bring mixture to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. cook and stir until liquid is reduced by half, 5 to 10 minutes; remove from heat. whisk butter into mixture until melted and sauce is shiny. pour sauce over lamb and plums.

  • 2 1/4 cups all-purpose flour
  • 3/4 cup cornmeal
  • 1/2 teaspoon salt
  • 3/4 cup butter, diced
  • 2 eggs
  • 4 tablespoons cold water
  • 1 1/2 cups ricotta cheese
  • 4 ounces feta cheese
  • 1 cup grated parmesan cheese
  • 1 egg
  • 1/4 cup chopped parsley
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons chopped fresh oregano
  • 2 cups shredded mozzarella cheese
  • 1/2 pound ham slices
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 (16 ounce) jar roasted red peppers, drained and patted dry
  • 1 egg

Recipe

  • mix flour, cornmeal, and salt in a bowl. cut in butter with pastry blender until mixture resembles coarse crumbs. beat 2 eggs with 3 tablespoons cold water; stir into flour mixture until dough holds together. add another tablespoon water if needed. shape 2/3 of the dough into flattened round; repeat with remaining 1/3. wrap. refrigerate at least 30 minutes, or until firm enough to roll.
  • in another bowl, combine ricotta cheese, crumbled feta, parmesan cheese, 1 egg, parsley, basil, and oregano until well blended.
  • have an 8 or 9 inch springform pan ready. on a lightly floured surface, roll out the larger portion of dough into a 15 inch diameter circle. carefully place in ungreased pan; press lightly against bottom and sides. trim overhanging dough to 1 inch from pan rim.
  • scatter half of the mozzarella over the bottom of the crust. next arrange half the ham slices in an even layer. spread with ricotta cheese mixture, then sprinkle with spinach. cover with the remaining ham slices. press down gently to pack layers. add red peppers in a single layer, and top with the remaining mozzarella. press down again.
  • roll out remaining dough to 8 or 9 inch circle. place over filling to cover. moisten edges, and seal crusts together. crimp or flute edges. crust should not extend above pan rim. beat remaining egg, and brush over the crust. cut several small vents in top crust for steam to escape.
  • bake at 375 degrees f (190 degrees c) for 1 hour, or until crust is deep golden brown and pulls away from sides. cool in pan on wire rack 45 minutes. remove pan sides; cool completely. cut into 12 wedges. serve at room temperature.
