sweet lamb with beets

Ingredients

  • Servings: 6
  • 1 cup water
  • 1 cup uncooked long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger root
  • 1 1/2 pounds lamb tenderloin, cut into thin 1 1/2 inch strips
  • 2 tablespoons oyster sauce
  • 1 teaspoon salt
  • 3 (8.25 ounce) cans sliced canned beets, juice reserved
  • 1 1/2 cups sugar

    Preparation Time: 15 mins Cook Time: 25 mins Ready Time: 40 mins

  • in a medium saucepan, bring the water to a boil. stir in the rice. reduce heat, cover, and simmer 20 minutes.
  • heat the oil in a separate medium saucepan over medium heat, and stir in the garlic and ginger. cook about 1 minute. mix in the lamb, oyster sauce, and salt.. cook 10 minutes, stirring continuously, until lamb is evenly browned.
  • stir the beets, about 2/3 cup reserved beet juice, and sugar into the lamb mixture. continue cooking 10 to 15 minutes, until beets are tender. serve over the cooked rice.
