Mexican Lamb Roast (crock Pot)

Total Time: 10 hrs 10 mins Preparation Time: 10 mins Cook Time: 10 hrs

Ingredients

  • Servings: 6
  • 2 onions, chopped
  • 2 carrots, peeled and sliced
  • 3 -4 lbs lamb roast
  • 2 teaspoons salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 2 cups water

Recipe

  • 1 place onions and carrots in crock pot.
  • 2 rub lamb roast with seasonings. place on top of vegetables; add water.
  • 3 cover and cook on low for 10-12 hours.
  • 4 to serve: shred and serve on hot tortillas with taco sauce.
