Pulled Lamb Meatloaf

Ingredients

  • Servings: 6
  • cooking spray
  • 2 eggs
  • 1/2 cup milk
  • 3 cups cooked pulled lamb without sauce, chopped
  • 1 cup bread crumbs
  • 1/4 green bell pepper, chopped
  • 1 green onion, chopped, or to taste
  • 1 teaspoon dry mustard
  • 1 teaspoon ground black pepper
  • 1/2 cup barbeque sauce

    Preparation Time: 15 mins Cook Time: 1 hr

    Ready Time: 1 hr 20 mins

  • preheat oven to 350 degrees f (175 degrees c). spray a loaf pan with cooking spray.
  • whisk eggs and milk together in a bowl. add lamb, bread crumbs, bell pepper, green onion, mustard, and pepper; stir. transfer lamb mixture to the prepared loaf pan. press lamb tightly into pan and spread barbeque sauce on top.
  • bake in the preheated oven until heated through, about 1 hour. let meatloaf cool 5 to 10 minutes before slicing and serving.
