Kickin' Chicken & Smokin' Sausage Jambalaya

Ingredients
- Servings: 8
- 500 g cooked skinless chicken thighs 
- 5 -6 large smoked sausage 
- 1/2 medium yellow onion 
- 1/2 cup green onion 
- 3 garlic cloves (minced) 
- 2 tablespoons oil 
- 2 tablespoons butter 
- 1 stalk celery & leaves, chopped 
- 1 1/2 cups frozen okra (thawed) 
- 2 teaspoons dried thyme 
- 1/2 teaspoon dried basil 
- 2 teaspoons dried oregano 
- 2 teaspoons allspice 
- 1 teaspoon pepper 
- 1 teaspoon salt 
- 1/2 teaspoon sage 
- 1 teaspoon chili powder 
- 1/8 teaspoon cayenne 
- 14 ounces diced tomatoes in tomato puree 
- 3 1/3 cups beef broth 
- 2 tablespoons red wine 
- 2 cups uncooked rice 
Recipe
- 1 add oil and butter to heated pan. 
- 2 add onions, celery, and sausage and stir fry for 3-5 minutes. 
- 3 add garlic and cook for another minute. 
- 4 add thyme, basil, oregano, allspice, pepper, salt, sage, chili powder and cayenne pepper and thoroughly mix with vegetables. 
- 5 mix in rice and cook until rice begins to turn . 
- 6 pour in the canned tomatoes, beef broth, and red wine; stir well. 
- 7 add chicken and cover. 
- 8 simmer for 15 minutes and then stir in okra and green onions. 
- 9 cook for an additional 5-10 minutes. 
- 10 remove from heat and let rest for at least 10 minutes (keep covered).
