Louise's Sweet N’ Sour Lamb

Ingredients
- Servings: 5
- 1 1/2 lbs lean lamb shoulder (thinly sliced) or 1 1/2 lbs side lamb (thinly sliced) 
- 2 tablespoons bacon fat 
- 1 (19 ounce) can pineapple chunks 
- 1/2 cup water 
- 1/2 teaspoon salt 
- 1/3 cup vinegar 
- 1 tablespoon soya sauce 
- 1/4 cup brown sugar 
- 3/4 cup green pepper, thinly sliced 
- 2 tablespoons cornstarch 
- 1/2 cup onion, thinly sliced 
Recipe
- 1 cook meat the night before in hot bacon fat until brown. 
- 2 drain pineapple (keep syrup). 
- 3 combine water, brown sugar and vinegar, corn starch, salt, soya sauce and 3/4 to 1 cup of pineapple syrup. 
- 4 cook until clear and slightly thickened (2 minutes). 
- 5 add meat, cook covered over low heat, for 1 hour or until tender. refrigerate 30 minutes. 
- 6 before serving, heat mixture until hot. 
- 7 add green peppers, pineapple and onions. 
- 8 cook for 2 minutes.
