Northern China Steamed Egg Custard

Ingredients
- Servings: 2
- 1 tablespoon oil 
- 1/2 cup ground beef or 1/2 cup lamb, tightly packed 
- 3 tablespoons chopped scallions 
- 2 teaspoons soy sauce 
- 4 eggs, beaten 
- 1 1/2 cups clear broth 
Recipe
- 1 heat the oil in a small skillet. add the meat, scallions and soy sauce and stir-fry for 2 minutes. 
- 2 whisk the eggs and broth together. 
- 3 place the meat mixture into a microwave safe bowl. pour the egg/broth over the meat mixture. 
- 4 cover and microwave on high for 5 minutes. if not firm, microwave for additional 30 seconds.
