Glazed Roast Lamb Tenderloin

Ingredients

- 2 tablespoons dijon mustard
- 1 tablespoon honey
- 1 tablespoon orange juice
- 1/2 teaspoon grated orange zest
- 1/4 teaspoon cinnamon
- 1/8 teaspoon allspice
- 1 lb lamb tenderloin, trimmed of all visible fat
Recipe
- 1 combine in a small bowl dijon mustard, honey, orange juice, zest, cinnamon and allspice.
- 2 set aside.
- 3 place the lamb tenderloin on a rack in a shallow roasting pan.
- 4 roast in a preheated 325 f oven for 30-45 minutes, or until lamb reaches an internal temperature of 160 f.
- 5 during the last 10 minutes of cooking, brush the lamb occasionally with the mustard mixture.
- 6 remove lamb from oven.
- 7 let stand for 5 minutes before cutting crosswise into slices and serving.
