Glazed Roast Lamb Tenderloin

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon orange juice
  • 1/2 teaspoon grated orange zest
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1 lb lamb tenderloin, trimmed of all visible fat

Recipe

  • 1 combine in a small bowl dijon mustard, honey, orange juice, zest, cinnamon and allspice.
  • 2 set aside.
  • 3 place the lamb tenderloin on a rack in a shallow roasting pan.
  • 4 roast in a preheated 325 f oven for 30-45 minutes, or until lamb reaches an internal temperature of 160 f.
  • 5 during the last 10 minutes of cooking, brush the lamb occasionally with the mustard mixture.
  • 6 remove lamb from oven.
  • 7 let stand for 5 minutes before cutting crosswise into slices and serving.
