Hot Sausage Soup (aka Cindy"s Soup)

Ingredients

  • Servings: 8
  • 1 1/2 lbs bulk hot sausage
  • 2 1/4 cups chopped green peppers (about 3 medium)
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 6 cups water
  • 2 (14 1/2 ounce) cans italian-style stewed tomatoes
  • 1 (14 ounce) can chicken broth
  • 1 tablespoon sugar
  • 1 teaspoon dried basil, crushed
  • 1 teaspoon dried oregano, crushed
  • 1 tablespoon worcestershire sauce
  • 2 1/2 cups mini bow tie pasta

Recipe

  • 1 cook hot sausage, pepper, onion and garlic in 6 quart dutch oven until meat is cooked through and vegetables are tender.
  • 2 drain off fat. pat with paper towell to remove most of grease.
  • 3 add water, undrained tomatoes, chicken broth, sugar, spices and worcestershire sauce.
  • 4 bring to boil, reduce heat, cover and simmer 45 minutes.
  • 5 stir in pasta.
  • 6 cook uncovered 10 to 15 minutes until pasta is tender.
  • 7 serve in bowls and enjoy.
