Maple Jack Lamb Chops (crock Pot)

Ingredients
- 1 large sweet onion, peeled and slices
- 4 thick-cut boneless lamb loin chops, rinsed and patted dry
- salt and pepper
- 1/2 cup pure maple syrup
- 1/4 cup jack daniels whiskey
- 2 tablespoons dijon mustard
Recipe
- 1 place onions in bottom of 4-5 qt slow cooker.
- 2 season lamb chops with salt and pepper.
- 3 in a small bowl, whisk together maple syrup, whiskey and dijon mustard.
- 4 dip each lamb chop into the syrup mixture and place in slow cooker on top of the onions.
- 5 pour remaining syrup mixture over the lamb chops.
- 6 cover and cook on low setting for 4-5 hours.
