Mini Bacon Meatballs

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 2 slices bacon, diced
  • 1/4 cup onion, diced
  • 1 teaspoon garlic, minced
  • 1/2 lb ground sirloin (can combine with ground turkey, chicken or lamb)
  • 1/4 cup breadcrumbs, dry (panko nice)
  • 2 tablespoons parsley, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 egg, beaten

Recipe

  • 1 preheat oven to 400°f.
  • 2 use silpat in a baking pan with a lip or oil a broiler pan.
  • 3 cook bacon in a skillet until just starting to crisp, about 4 minutes. remove and set aside on a paper towel.
  • 4 leave 1 tbs dripping in skillet.
  • 5 saute onion in that skillet over medium heat until softened, about 3 minutes.
  • 6 add garlic and cook another minute.
  • 7 combine ground meat, bacon, onions, bread crumbs, parley, paprika, salt and pepper in a large bowl.
  • 8 stir in beaten egg.
  • 9 form into 1 inch meatballs and place on your prepared pan.
  • 10 bake until fully cooked, about 10 minutes.
  • 11 if you want to store them, cool and place on a baking sheet and freeze. then transfer to an airtight container.
