Peppered Lamb And Wine Stew

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 1 lb lamb tenderloin, sliced
  • 1 cup beef broth
  • 1/2 cup dry wine
  • 1 medium onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 garlic clove, minced
  • 2 teaspoons finely crushed peppercorns
  • 1 tablespoon red wine vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • salt and pepper
  • 1/4 cup minced chives or 1/4 cup parsley

Recipe

  • 1 combine all ingredients except vinegar, cornstarch, water, salt, pepper and chives in a slow cooker.
  • 2 cook on high 3-4 hours.
  • 3 combine vinegar, cornstarch and water. stir into stew.
  • 4 season to taste with salt and pepper. serve sprinkled with chives.
