Peppered Lamb And Wine Stew

Ingredients

- 1 lb lamb tenderloin, sliced
- 1 cup beef broth
- 1/2 cup dry wine
- 1 medium onion, chopped
- 1/2 cup red bell pepper, chopped
- 1 garlic clove, minced
- 2 teaspoons finely crushed peppercorns
- 1 tablespoon red wine vinegar
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- salt and pepper
- 1/4 cup minced chives or 1/4 cup parsley
Recipe
- 1 combine all ingredients except vinegar, cornstarch, water, salt, pepper and chives in a slow cooker.
- 2 cook on high 3-4 hours.
- 3 combine vinegar, cornstarch and water. stir into stew.
- 4 season to taste with salt and pepper. serve sprinkled with chives.
