Green Chile Stew

Ingredients

  • Servings: 8
  • 1 lb lean lamb, cubed
  • 1 lb lean beef, cubed
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 cup chopped celery
  • 3 cloves garlic, minced
  • 8 hot green chilies, chopped
  • 2 large potatoes, diced
  • 3 tomatoes, chopped
  • 1 can beef broth
  • 1 cup water
  • 1/2 teaspoon dried oregano

Recipe

  • 1 heat the oil in a large non-stick frying pan, cook the garlic for a few minutes and then add the lamb and beef and cook until browned.
  • 2 place the garlic meat mixture in a large pot and add the remaining ingredients.
  • 3 bring to a boil then cover and simmer on a low heat for an hour or so until very tender (meat falling apart).
