Green Chile Stew

Ingredients

  • Servings: 6
  • 2 lbs lamb, cubed
  • 1/4 cup flour
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cups green chili peppers, chopped
  • 2 (14 1/2 ounce) cans tomatoes
  • 2 cups water
  • 1/2 teaspoon garlic powder
  • 2 teaspoons salt

Recipe

  • 1 dredge lamb in flour, shaking off excess.
  • 2 in a large soup pot, heat oil and brown lamb. remove lamb and set aside.
  • 3 saute onions in same pot and then return lamb to pan, and stir in remainder of ingredients. simmer for 1 hour or until meat is tender and mixture has thickened.
